It’s been a couple of months since the Van Gogh-themed afternoon tea at Fairmont Singapore’s Anti:dote has concluded – after being extended for months past its initial deadline due to popular demand. If you missed out on that, or simply have an appetite for edible art, you’ll want to make a booking for  the hotel bar’s newest afternoon tea rendition, this time inspired by Claude Monet.

Yet another part of their ‘Season of Impressionists’ menu series, this Claude Monet-themed afternoon tea set features a generous spread of sweet and savoury bites, along with freshly-baked vanilla scones served with lemon butter curd and strawberry marmalade – all served in a gorgeous tiered treasure box.

Many of the items come topped with greens and edible flowers, a nod to the famous French painter’s Water Lilies and other nature-focused works. Take a glance around the space and you’ll also find prints of his unmistakable paintings hung on the walls. Don’t forget to snap a photo at the Water Lilies photo wall located right by the entrance!

While the previous afternoon tea specials required a top-up for cocktails, this one includes your choice of either the Unstoppable Bloom or The Farandole as part of the set. The former is an infusion of yam shochu, elderflower, homemade smoky honey miso and sesame with a strong jolt of coffee, while the latter is a lot lighter on the palate with refreshing flavours of yuzu and lychee, alongside shiso gin and homemade honey beer.

Those who’d rather not day drink can order any two non-alcoholic drinks (mocktail, tea, or coffee) at no extra charge.

Opt for an amuse bouche or two if you so fancy. The BBQ carrot with candied orange peel in a spring roll shell has a pleasant char, but if you’re going to pick just one item, we’d recommend going straight for the cured scallop on rice crackers. Drizzled with white ponzu and sudachi (Japanese lime), this bite-sized treat is bursting with umami.

It’s a tough fight between the sweet and savoury items for this one. While the art theme is a little more subtle here visually compared to the previous Van Gogh edition, there are a lot more hits with well-balanced flavours in this set. Standout items include the tomato concasse with kalamata olive and olive caviar, Granny Smith apple confit tart with basil cream, and vanilla clafoutis with apricot. Seafood-lovers will also enjoy the mini saffron brioche poached Boston lobster roll topped with Avruga caviar.
