There’s a lot that goes into the perfect flaky buttery pastry and chef Sarifi knows just that. At GAMO Bakehouse, the pièce de résistance is the pain au suisse ($6). Think shatteringly crisp buttery pastry with chewy insides and a luscious bed of semi-sweet yet milky chocolate chips. When classics as such are done right, it is simply hard to resist. Fans of the savoury should definitely try the Japanese-inspired kani mentaiko croissant ($7.50). It is lavish stuffings of sashimi-grade crabsticks and mentaiko torched to deliver a creamy sweet-savoury sensation.

Those treats are made by the deft hands of chef Sarifi who has clocked over 12 years of pastry-making experience with renowned hotels – most recently being Pan Pacific Singapore – where she noticed a scarcity of halal fine cakes and pastries. Now, she breaks out with GAMO, a Muslim-owned Japanese-French-inspired bakery with a touch of Scandinavian minimalist influence tucked away in Bain Street.

Brandishing the Elle & Vire butter promise, chocolate from the lauded Cacao Barry, matcha from Kyoto down to the highest grade of French flour, there’s an unshakable emphasis on only using the finest of ingredients to craft the artisanal bakes. The bakehouse is also pretty experimental with surprise drops of bagels, Kouign-Amann, and even the hyped croons through announcements on their social media – so keep your eyes peeled.
