Bowls of ramen that are big on flavours

It’s not just the Japanese that know how to spot a good bowl of ramen. People in London flock to Kanada-Ya, a ramen joint with roots in Fukuoka, Japan, to sample its piping hot noodles. It was ranked by the British national broadsheet, The Telegraph, as London’s top ramen restaurant in 2015. And now, the famed ramen chain has opened its first outlet in Singapore – in a humble 40-seater space at Paya Lebar Quarters. 

Part of its appeal lies in its boldly flavoured creations. In particular, the Chashu Tonkotsu Ramen (from $16.90) which comes with a creamy, collagen-rich broth simmered for hours with pork bones. Hand-pulled noodles, springy and thinner than the usual, is served together with tender slices of pork collar chashu, wood ear fungus mushrooms, spring onions, and seaweed. 

Another highlight is the special truffle ramen (from $22.90) where only 20 bowls are available daily. In it, the signature pork bone broth is mixed with corn-fed chicken stock and truffle oil, complete with slices of special truffle-marinated pork belly chashu and aromatic black truffle paste. Give it a good mix before slurping up the rich broth punctuated with gentle notes of truffle.

Those who like their spice can go for the spicy yuzu ramen (from $16.90). The layered broth, refreshing yet spicy, gets its gentle heat from the special yuzu miso paste. For a fierce fiery kick, order the Gekikara Ramen (from $16.90) with spicy miso and minced pork.  

Complete your meal with a selection of sides that include chicken karaage ($6.90), crab cream korokke ($9.90), and wasabi mayo gyoza ($6.90) – but you probably won’t need it given how generous the serving portions are.

As a treat, from December 13 to 15, the ramen joint will also be giving out 100 percent cashback via the Kanada-Ya app for first-time customers.
