Set against the stark and rugged mountains of its home in Leynavatn in the Faroe Islands is KOKS (meaning "loving care"), possibly the world's most remote restaurant. You would normally have to travel 10,000 kilometres from Singapore for a taste of its cuisine – now, you have the chance to dine at KOKS right here on our island.

From January 23 to February 18 2022, the team from this two Michelin-starred restaurant will be taking up a chef residency at Grand Hyatt Singapore. Expect the full and authentic KOKS dining experience too, because executive chef Poul Adrias Ziska and the core team of chefs and front-of-house staff will be leading the residency. They've taken special care to fly in rare produce from the Faroe Islands, and are taking care of the details down to music and ambience.

KOKS sits at the cutting edge of new Nordic cuisine, respecting local and seasonal ingredients for dishes that emphasise simplicity and freshness. Expect a menu steeped in the traditional technique of ræst, a fermentation method that involves exposing meat to salty, brisk air. Signatures include fermented ocean perch with fermented lamb intestines and cheese, and cod filet with fermented cabbage and caviar. The langoustine roll, a star appetiser, will also be on the menu.

The residency will be taking 30 diners for lunch and 45 diners for dinner. Prices start from $228 for lunch and $458 for dinner, with wine pairing available at a top-up of $148 for lunch and $248 for dinner. Priority booking begins today for premium Card Members notified by American Express Singapore. The general public will have to wait till December 14 to make bookings at chefresidence.com.
