This Mohamed Sultan Road stalwart checked itself into The Club Hotel in the Ann Siang Hill neighbourhood last year, bringing along its French-Vietnamese offerings. Named after the mountainous region of North Vietnam, the dual menu is French and Vietnamese and we suspect the pull is the latter option. Especially delightful is the wonderfully named cha ca la vong ($32), a sizzling fried sea bass smothered with a paste of golden turmeric and fresh dill. Pair that with a superb pomelo salad studded with prawns and peanuts, and beef pho drenched in an earthy, rich broth. Gold wallpaper, timber panels and starched linen complete the muted IndoChine vibe, though service can be a little patchy.
