Prolific local hotelier and restauranteur Loh Lik Peng is back with another Gardens by the Bay venue (after Pollen, his collaboration with UK chef Jason Atherton) – this time, he’s teamed up with locally-based chef Yong Bing Ngen (their second collaboration after Jing at One Fullerton) for another Majestic Bay outlet. Located in the Flower Dome, the 110- seat dining room is unsurprisingly a nearmatch to the layout of Pollen; chef Yong’s menu here is a tribute to some of Singapore’s favourite classics done with a modern twist. Appetisers include homemade tofu with pork floss ($10) and chilli crab meat buns ($4.50/ three), but the main draw is the fresh seafood: chilli crab ($56 per kg) and lobster ($180/kg, Australian-imported $250/kg). Dim sum is also offered at lunch; try the pork dumplings ($4.20/four).
