What started as a private dining concept by Bryan Wai has since evolved into a full-fledged restaurant in 2022, under the guidance of Wong Jing Kai of Scaled by Ah Hua Kelong. Pilot Kitchen is run by a raucous young gang of four blokes, who cook up everything from Hasselback potatoes and grilled Hamachi collar to duck menchikatsu. The open-concept kitchen doles out house favourites like the simple-but-divine milk bun with house-churned butter, and the signature butter cake dessert with a side of cheese ice cream and fried shallots — toeing the line between sweet and savoury.
