Opulent in decor, yet contemporary in its cuisine, the Park Regis Singapore’s 142-seater Royal Pavilion restaurant welcomes new executive chef Chai Ngen Kin in its kitchen. Aside from the usual Cantonese soups, roasts and seafood dishes, chef Chai has introduced new and healthy plates to the menu, most notably his signature dish, spinach fried rice. He won an award for the wok-tossed stunner in 1997, and has since gone through many iterations to make it as tasty as it is today. Other light dishes include the steamed cod fish with spring onion and coriander, and ginger chicken roll with spring onion sauce, so you won't ever have to worry about overindulging here.
