Bringing years of sushi-making experience to this niche Japanese restaurant in Tanjong Pagar is head chef Ryosuke Harada, who founded Sushi SORA at the five-star Mandarin Oriental, Tokyo. Sushi Mitsuya prides itself in the art of Omakase – dishes selected by the chef – and quality dishes including sushi medleys such as the mizukagami ($100) that comes with assorted sashimi and six different pieces of sushi.
