Tiong Bahru Bakery Diner is the latest iteration of the homegrown French bakery. And as its name suggests, the space, located at Raffles City Shopping Centre, has transformed into an all-day dining space, serving up familiar brunch classics and hearty mains alongside top-notch bakes the brand is known for.
Highlights include the chayote kimchi and mung bean salad ($16), which is made with the addition of housemade kimchi that’s left to ferment for at least a month, and the Super Green Warm Soup ($16). Those with a bigger appetite should try the hot chicken salad with roasted pumpkin ($20) – a deceptively time-consuming dish to prepare. Chicken breast is first marinated overnight in spices of turmeric and lemongrass, slow-cooked, then finished on the pan with brown butter till it’s slick with flavour.
Luckily, not everything leans healthy on the menu. There’s the indulgent pulled pork creamy risoni pasta ($22), a riff on the usual risotto; the classic organic eggs benedict ($22); and stacks of pancakes or waffles, made savoury ($23) with the addition of bacon and honey ricotta, or served sweet ($21) with mangoes and lemongrass chantilly cream. But the main star, the 100% sourdough waffles, made from an ancient 158-year-old starter that has been brought over from Brazil, is best savoured plain as it is.
And as a sweet end to your meal, an order of the bakery’s famed pastries is a must. The next time you do, try asking for a serving of its off-the-menu secret kaya ($0.50) – ingredients of fresh pandan juice, coconut milk, caster sugar, and egg is emulsified with virgin coconut oil to lend a special soufflé-like texture.
