It's the first time a chef from a Japanese three Michelin star restaurant is making a guest appearance at a Singapore restaurant and among the dishes to expect from chef Shintaro Esaki's contemporary Kaiseki menu are ethically harvested fish and vegetables flown in from village farms outside Tokyo, Ayu sweet fish potage (a well-loved signature summer dish), and Suzuki sea bass delicately steamed in sake.
Cost: $110++ five-course lunch, $250++ seven-course dinner
