Prepare yourself for a total sensorial treat of coastal scents and flavours at Ombak. Hosted at Peranakan Museum as part of Singapore Heritage Fest, the two-hour-long communal dining and sensory experience invites you on an immersive journey through taste, aroma and memory. The programme is designed to deepen your connection and appreciation for the region’s culinary and coastal heritage. It is led by perfumer Lukman Hakim of UNTA Aromatics and Chef Suria of Dapur Cahaya.
Blending fragrance, food and stories, the programme begins with a guided introduction to coastal-inspired aromas, where you’ll encounter the familiar notes of herbs, spices, banana leaves and the sea. It then moves into a live demonstration of pepes ikan daun pisang. This beloved Nusantara dish features fish wrapped in banana leaves, cooked slowly to draw out the layers of spice and scent. From the creation of the spice paste to handling the fish and the final wrapping technique, observe the steps in this meticulous preparation conducted by Chef Suria. Throughout the programme, you’ll be encouraged to engage with the key ingredients through sight and smell, before it concludes with a reflective communal feast centred around the prepared dish.
