Welcome the spring season with Tiffin Room’s specially curated menu, The Wondrous Flavours of Holi. To mark the beginning of the Hindu festival of colours, Holi, the Raffles Hotel restaurant has brought together a delectable and exclusive festive spread spotlighting North Indian cuisine. Created by chef Kuldeep Negi, the menu is available for lunch and dinner, and features vegetarian and non-vegetarian options.
For the vegetarian menu, tuck into Subz Methi, an aromatic dish that’s prepared with fenugreek leaves and seasonal mixed vegetables. Meanwhile, the non-vegetarian menu offers a classic Bengali treat – the Chingri Malai Curry features prawns cooked in coconut milk and sweet-scented spices. Both menus finish off with the chanderkala, a traditional deep-fried North Indian dessert that’s stuffed with nuts.
To complete the dining experience, you can also opt for its menu of alcoholic beverage pairings. Complement each course with selected beers, reds, whites and Indri Trini, an Indian whisky with notes of oak, berries, nuts, honey and spice.
