This Rushcutters Bay Italian restaurant sits within the walls of a historic tyre factory and is all about serving up long lunches and Southern Italian plates. In Bar Mach's (formerly known as Bar Machiavelli) kitchen you'll find Naples-born chef Paola Toppi, who's behind all of the handmade pasta dishes on the menu. Local favourites include ravioli osso buco, which combines the veal comfort dish with a rich saffron jus; pappardelle with blue swimmer crab; and seafood gnocchetti, which sees little lobed shells tossed with scampi and prawns. Also it's worth saving a Friday lunch for a visit – they take things up a notch with Italian films projected on the walls, making for the kind of atmosphere the fuses lunch into suppertime.
