Chicago is home to plenty of great restaurants and bars, but sometimes checking something new or fleeting out can be fun, too. We've rounded up a few of our favorite picks for pop-ups you should check out over the next few weeks.

Boleo pop-up and cocktail preview at Celeste: Boleo will open on the 15th floor rooftop of the Kimpton Gray Hotel later this summer, but on August 2, head bartender Jess Lambert (The Dawson, Sable Kitchen & Bar) and Mike Ryan (director of bars for Kimpton Hotels & Restaurants) will be serving up a few of the cocktails we'll see on Boleo's menu in advance. They'll have a bit of Argentine and Peruvian flair like strawberry-infused pisco and grilled pineapple. Celeste Rooftop Garden, 111 W Hubbard St. August 2, 5–8pm. All Boleo cocktails, $8.

Veuve Clicquot Journey: This champagne's taking a cross-country pop-up tour and stopping in Chicago for a few days, so stop by some of these Chicago bars to see what kind of food pairings and games they'll have. July 29: 2–4pm, Waldorf Astoria Chicago. 3–5pm, City Winery. July 30: 11am–2pm, Federales. July 31: 3–6pm, Saint Lou's Assembly.

Temporis August Pop-Up Dinners: Temporis, the new tasting menu–only restaurant, will be opening in September from chefs Sam Plotnick and Evan Fullerton. But for now, they'll be taking up residence at Local Foods for a few 10-course pop-up dinners. The menu will focus on a single ingredient in each dish with accompanying ingredients. Local Foods, 1427 W Willow St. August 7, 14 and 28 at 6pm. $90.
