Kick off Valentine’s dinner with an amuse-bouche of watermelon cubes with sesame, dried Bonito flakes and rose-infused vapour. The appetiser of marinated salmon with dill cream cheese will arrive next, followed by a salad of Alaskan crab with baby fennel and a capsicum bisque with smoked scallop and Boursin cheese. The main event is a pan-seared white cod with coconut tapioca and spicy cilantro sauce, before a lychee and rose mousse ends the night.
