200g blueberries

6 raspberries

Half cup of ice

250ml of fresh milk

2 cups of baby spinach

2 small cloves of garlic

0.5 cup of pistachios (or walnuts)

0.75 cup of olive oil

Method

Place baby spinach, garlic and pistachios into the hand blender chopper attachment.

Pour in olive oil.

Use the turbo option and blend for 30 seconds.

Cranberry, Cointreau and Clementine Crumble

Serves 4

Ingredients

250g cranberries

Juice of one large orange

A splash of Cointreau

100g sugar (caster or granulated)

100ml water

Crumble topping:

75g butter, cubed

175g plain flour

50g caster sugar 

Method

Put the cranberries, orange juice, Cointreau, sugar and water in a pan on medium heat and leave to warm up until just simmering. Wait until all the cranberries have burst and the mixture has thickened, with plenty of juice remaining.

Add the butter, flour and sugar to the mixer and turn on to a low speed. Leave it for a minute or so until the mix develops a breadcrumb-like texture.

Put the fruits into a dish then top with the crumble. Place in a preheated oven at 180C for 30-40 minutes or until nicely browned.

Ingredients

500g ‘00’ flour

Pinch of sea salt

7g sachet of dried instant yeast

1 tsp caster sugar

30ml extra virgin olive oil

325ml water

Passata

Grated cheese

Your choice of toppings (like ham, rocket and tomatoes) 

Method

Add the flour, salt, yeast and sugar to the mixer bowl and attach the dough hook.

Add the olive oil and half the water. Set the machine running.

Add more water slowly, until a sticky (but not wet) dough is formed.

Keep the machine running for a few minutes until the dough is soft and elastic.

Place in a lightly oiled bowl, cover and leave in a warm place to double in size.

Divide the dough into two (for large pizzas) or six (for individual pizzas) portions.

Roll out on a floured surface.

Place on a baking sheet and spread the passata over pizza bases.

Cover with grated cheese, mozzarella and toppings.

Bake in preheated 200C oven for approximately 15 minutes.
