Sustainable Scandi-meets-Shoreditch bar from cocktail star Talented Mr Fox.

Fancy playing a game of guess the ingredient? I went off-menu at Scout and sampled a red-hued drink made from... wait for it... beetroot. Scout’s mantra is: ‘Live off the land.’ Cocktails are crafted from items foraged in the UK in the bar’s quest for sustainability. Never mind the British Isles, the menu reads like a whip around the aisles of Waitrose, with Parsnip, Asparagus and Knotweed among the names of drinks. One drawback is that it’s not clear what booze is in each. Ask those questions when ordering.

That beetroot tipple was a subtle, almost chocolatey nightcap with only a faint whiff of earthy veg. More conventional was the sea buckthorn, a long, citrussy gin drink using coastal berries as a substitute for lemons. They’re also cultivating yeast to make their own ‘ferments’, brewing a range of Scout beers and applying wine-making techniques to fruity ingredients. All the trickery happens below in a metallic lab. But nerdy stuff aside, the ground floor is kitted out in Scandi pine with terrariums perched on ledges – I wish my front room looked like this. Hunky staff sit down to chat through the menu for more of those hygge vibes. Don’t worry though, those adventurous, often edgy drinks will keep you from getting too comfortable.

Scout no further. Seriously scrumptious cocktails that will challenge your senses, a sumptuous and slick interior, and some salacious silky beats. Deep discussions about music genre categories may or may not be included. Do ask about each cocktail and their flavours as the ingredients aren’t conventional but are all locally sourced and seasonal - the Acorn cocktail is smooth and not what you’d expect. You also get a little nibble on the house when you’re seated; which definitely keeps me happy.

Tip: The Lab in the basement does a daily changing menu of food and drink and also look out for collaborations they do on their Instagram or Facebook.

Good For: date night, something different, small groups, catch up with friends, celebration, intimate drinks


A lovely bar with a fabulous concept: cocktails and food all made from seasonal products sourced by the owners. The bartenders are attentive and eager to talk you through the unfamiliar menu and I enjoyed every cocktail we tried. Whilst the cocktails are rather pricey, the ferments at £8 a bottle are pretty reasonable and delicious too. Definitely worth a try for something completely different than what you're used to!

I think this may be one of the best cocktail bars I've tried in quite some time. It's expensive, with cocktails costing £11 each, but the effort, time, and talent that goes into making each of these extraordinary drinks.

The menu features some interesting flavour combinations and clever techniques. For example, the Asparagus is made with white British asparagus blended into Cocchi Americano vermouth. Then spun in a centrifuge to clarify. In it includes caramelised white chocolate bourbon made in a 72 hour process and finished with a dash of Tequila. It is smooth and sweet and beautiful.

The Fig Leaf (pictured) is made with foraged fig leaves, infused into Grey Goose vodka, and Woodford Reserve, separately. It is their take on an Old Fashioned. The vodka is redistilled, and then fresh Woodford is added to these. The syrup is made from fermented gorse flower wine! The ice cube is hand printed with the Scout logo using a special stamp made from copper - I have never been more obsessed with a block of ice before, but it's little details like that which make places like this a winner!

We had a few more cocktails each but if cocktails ain't your thing then you simply MUST order the Raspberry + Sorrel Ferment (£8) made with raspberries and fig leaf, bottled with some sugar to make it carbonate in the bottle, they also added a splash of Sorrel Vodka that they redistilled to create this extremely light sweet carbonated drink which reminded me of sparkling wine from the South of France! Incredibly quaffable and light and perfect for a warm evening.

To eat we enjoyed their cheese plate which features all British cheeses (including a Brighton Blue which was creamy and punchy!) and their gorgeous plate of pickles including pickled beetroot and fennel. All packed full of flavour and a great accompaniment to the drinks.

The staff here are passionate and very knowledgeable about what they are doing - the manager takes the time to explain the concept and the drinks to each customer and is happy to answer any questions or offer recommendations of things you may enjoy. They have all gone above and beyond to create the best cocktails they can. Of course with the nature of seasonal ingredients the menu is constantly subject to change, but I quite like that. It means there is constant development and experimentation and they never rest on their laurels. I'll 100% be going back again and again!


After searching for something slightly different in Shoreditch, my friend and I visited Scout. The menu is really unsual, full of local produce and great flavours. We had a cocktail and ferment each along with the cheeseboard and pickles. Everything was great and the service was excellent from start to finish. The bar is only small but great for a quiet drink where to can have a decent conversation. Its not the cheapest, but you pay for the great service and local produce. Would definitely recommend.

I work round the corner and stumbled across this place last week. I'm so excited that this is on my doorstop. feels very zen and you can easily lose track of time. The drinks are so good i fear Scout may turn me into a drunk 

wow. i absolutely loved this bar. amazing concept, drinks were they best i have ever drank and the staff super friendly. can't wait to return 


Great concept of only sourcing British grown/made ingredients and lovely fit out inside. Bartender super knowledgeable and took the time to take us through the concept and then menu. Drinks were ok, very different. Appreciate what they are trying to do - no espresso martinis here!

Amazing bar, super chill vibes, with an awesome playlist, friendly and knowledgeable staff and on point cocktails. Give this a go if you are after something different in Shoreditch. Easily the best place I've been recently.
