Time Out says

This classy-looking cocktail bar at the Hilton London Bankside hotel plays on the building's past as an essence factory making flavourings for use in all manner of food manufacturing. Table waters, confectionery, jellies, syrups, that kind of thing.

That means plenty of own-made aromatics, infusions and bitters here, used on a cocktail list that goes big on gin – expect a wide range from a number of British producers. Craft beer should be a strong point, too. Sharing platters and bar snacks, prepared in the Oxbo Bankside restaurant next door, also feature.

The Distillery Bankside says
Located on the site of the Stevenson & Howell factory, which distilled essential oils and manufactured essences, flavourings and garnishes during 1800s, The Distillery Bar is an alchemist’s laboratory of sensations specialising in cocktails and craft beers.

Our mixologists are magicians conjuring glorious concoctions from spirits, bitters, homemade syrups and aromatics. We have over 50 hand-picked gins – fine old classics to new gins from artisan distilleries springing up all over Bankside, Southwark and Bermondsey.

The bar will also serve a range of sharing platters and bar snacks, so pop by and enjoy a variety of great bites and excellent drinks in an engaging and sophisticated setting, no matter the time of the day.
