The centuries long history of invasions have contributed to a rich culinary tradition in Morocco. Being at the crossroads of many civilisations; it is a mix of Arabian, Berber and Mediterranean cuisines – commonly called Moorish.The depth of flavour is widely attributed to the use of fresh ingredients, aromatic spices and the method of slow cooking over a gentle flame to create each dish. Many main courses are thus prepared in authentic clay tagines which trap and concentrate aromas and leave a subtle chargrilled-like flavour.
At Elfenoon we have tried to showcase the full spectrum of Moroccan cuisine -From our exotic Camel Tagine with date and fig sauce to tenderised beef tongue, fried baby octopus , marinated Cornish mussels to an extensive variety of exciting vegetarian dishes.
