It looks little more exciting than leftover stir fry once it’s in the box, but this Sri Lankan favourite is a dish far more delicious than it is pretty. The mutton version at Kothu Kothu (which means ‘chop chop’) is subtly meaty, fragrant with authentic spices, and even filling, thanks to the shredded Godhamba roti that makes up its bulk. The hotplate chopping noise is so soothing that it might count as mindfulness.
