Trained by Nudo&Crudo and Chef Vito Cortese, Lorena Loriato ( is at the school's Café 6 to give up the secrets of Italian raw food, which aims to get the best out of ingredients by avoiding aggressive preparation techniques.

There'll be demonstrations and practical work as you put together a whole day's menu, to eat there or take away. Ingredients are all organic and gluten-free (among them fresh nut milk, herbs and spices), and techniques include preparation of raw gourmet food with and without the use of the dehydrator, and the preparation of raw desserts.
