Young gun Miles Thompson won over L.A. with his ambitious Echo Park restaurant, Allumette; after it closed in 2014, he honed his craft at SHED in Healdsburg, California, and Christophe Harbour in St. Kitts. The young chef has reenergized Michael's with contemporary techniques—though on his day off, he’s not above having a bite at a solid Thai restaurant. We snagged him for a quick-fire Q&A about his favorite spots across the city.

Thai spots

"Sapp Coffee Shop is one of my favorites. I think I go to Sapp every single week."

Retro haunts

"There’s this strange steakhouse in Koreatown called HMS Bounty. It’s a trip."

Farmers’ market finds

"At the Santa Monica Farmers’ Market, I ask vendors if they have something [hidden] that I could try."

On the to-do list

"I really want to go to [Nordic-inspired restaurant] Destroyer."
