For four nights only, a former French Laundry chef is taking over Rokusho in Hollywood

One of Hollywood's most intriguing hidden restaurants is getting a guest chef takeover.

From June 25 through 28, Rokusho, the intimate Japanese restaurant off Sunset Boulevard, will host Chef Joseph Geiskopf for a four-night residency showcasing the chef's traveling culinary concept, On'ry.

If Geiskopf's résumé sounds familiar, that's because it reads like a greatest-hits list of modern fine dining. Before launching On'ry, he worked in the kitchens of The French Laundry, Noma, Red Medicine and Californios. His nomadic dining project allows him to collaborate with restaurants around the country, creating limited-run menus built around seasonal ingredients and local partnerships.

For this Hollywood stop, Geiskopf will present a special menu available exclusively during the residency, giving diners a chance to experience dishes that won't be offered once the collaboration ends.

Highlights include local tuna served with heirloom tomato, dashi granita, scallion and shiso; Hokkaido scallop paired with lychee, wild turnip and citrus fern; and smoked bone marrow takoyaki topped with bonito, ORRA Ossetra caviar, maple and crème fraîche. Dessert comes in the form of silken almond tofu with clementine granita, hand-pressed olive oil and citrus fern.

The residency also offers an early look at Rokusho's upcoming beverage program. Head mixologist Joe Honda, whose Tokyo-influenced cocktails helped establish the restaurant as a destination for serious drinkers, will debut several new creations alongside house favorites. Among the featured cocktails are the Avenue 81, made with Heavensake Azur, Roku Gin and Barsol Pisco, and the Gari Mule, which combines El Tesoro Blanco, sushi ginger, lime, ginger beer and syrup.

Pop-ups and chef residencies have become increasingly common across Los Angeles, but this one feels particularly noteworthy. Rokusho's low-key setting has made it something of an insider favorite, while Geiskopf's pedigree and roaming dining concept bring the kind of culinary curiosity that often produces memorable one-off meals.

Reservations for the residency are now available, and given the restaurant's intimate size and the limited four-night run, seats are unlikely to stay open for long.
