Here's your excuse to cool off with a giant Scorpion Bowl cocktail.

The rooftop at Waldorf Astoria Beverly Hills just got a dramatic makeover.

The luxury hotel just officially unveiled Gemma, a new California-inspired Pan-Asian restaurant and cocktail destination that transforms the rooftop into an indoor-outdoor lounge overlooking Beverly Hills, the Santa Monica Mountains and the Hollywood Sign.
Replacing the hotel’s previous rooftop concept, Gemma leans into escapist glamour, pairing Southeast Asian-inspired cuisine with tropical-leaning cocktails, plush design details and sunset-ready views. The restaurant is helmed by chef Peleg Miron, whose menu pulls influences from across Southeast Asia, Hawaii and Southern California.
Menu highlights include lobster wontons with chili ponzu, tuna tostadas topped with chipotle aioli, shrimp and papaya salad with kaffir lime and peanut vinaigrette, and a miso Caesar loaded with crispy wontons. Larger plates include Singapore noodles with Maine lobster, chicken makhani served with naan, and a filet mignon beef stir fry with shiitake mushrooms and eggplant.
There’s also sushi, sashimi and crispy rice with spicy tuna, because no upscale Los Angeles rooftop would dare open in 2026 without at least one crispy rice dish.
“Gemma is a reflection of the places that shaped me across Southeast Asia, Southern California, and Hawaii, where food is deeply expressive and meant to be shared,” Chef Miron said in a statement. “Each dish draws from those memories, with the intention of creating a sense of discovery and connection for our guests to experience something transportive yet familiar in the heart of Beverly Hills.”
On the drinks side, beverage director Jim Kearns is steering the menu toward what the hotel calls a “refined tiki spirit," including a giant shareable Scorpion Bowl made with multiple rums, cognac, gin, passion fruit and lime.
Gemma will also serve weekend brunch, adding another contender to Beverly Hills’ increasingly competitive rooftop brunch scene. The hotel says live music and entertainment programming are also on the way.
Visually, the rooftop sounds just as ambitious as the menu. Designed by Marc Ange, the revamped space features terracotta tones, lush greenery, sculptural yellow lantern-inspired floor lamps and a stone bar made from Breccia Pontificia marble.
Gemma is located at the Waldorf Astoria Beverly Hills, 9850 Wilshire Boulevard. It's open Monday–Friday, 11:30am–10pm, and from 11am–10pm Saturday and Sunday. For more information, click here.
