Restraint and simplicity rule the kitchen at Imari, an upscale Japanese restaurant in Brentwood specializing in washoku, a type of hyper-traditional cuisine. Along with chef David Schlosser, who runs Downtown’s Michelin-starred Shibumi, head chef Derek Wilcox offers a minimalist two-page menu whose attention to detail and craft might be missed by diners unfamiliar with the ways of traditional Japanese cuisine. At this small, ultra-modern 28-seat restaurant, you'll find an excellent (if pricey) meal, with every dish made with utmost care from start to finish.
