Out of all the gin joints in New York, these ones are serving some mighty fine new renditions of that summertime classic, the gin and tonic. Whether you want that refreshing highball on tap, deconstructed or completely customizable, these New York bars have got your G and T needs covered. 

Amada
The New York sibling to Jose Garces's acclaimed Philadelphia tapas parlor devotes an entire section of its bar menu to gin and tonics ($14)—guests can tailor the G and T to their own tastes by choosing from six gins (Dorothy Parker, Tanqueray), six tonics (Boylan, Fever Tree) and a slew of garnishes, including kumquat with cinnamon and lime with cucumber and fennel.  

Timna 
The modern Israeli restaurant puts a tropical spin on the traditional gin and tonic ($13)—beverage director Amir Nathan shakes a low-ABV twist with Dolin dry vermouth, Byrrh Grand Quinquina, juniper, lemongrass vinegar and lime. 

Genuine Liquorette
Eben Freeman deconstructs plenty of classic cocktails at this Little Italy basement bar, from a dark and stormy to a mojito to, yes, a gin and tonic ($10.10), made via a Cha-Chunker machine: A mini bottle of Bulldog gin is perched upside down into a can of Hansen's tonic with a wedge of lime for spritzing.

Solomon & Kuff
The drink may be called My Mother Ruined My Tonic ($14), but no tonics were harmed in the creation of this G and T riff: the version at this Caribbean-inspired Harlem bar pairs the namesake pair with a bay-and-sage reduction, mango, lime and agricole.

Thirty cocktails are on tap at this Bushwick barroom, including its Empirical Formula gin and tonic ($8), which features Dorothy Parker gin and the bar's bubbly house-made tonic. 

Proof + Gauge
Gin is the star of this 12-seat Long Island City bar, the tasting-room offshoot of the Astoria Distilling Company. The distillery's signature Queens Courage gin is shaken into two gin and tonics ($10 each): A traditional recipe made with Queens-based Haber's Tonic, as well as a spicy hibiscus number.
