A stretchy, Middle Eastern ice cream is now available in Williamsburg

Yes, yes, we know you’re sick of screaming for ice cream this summer. We know you're well aware of the city's best ice cream scoops and soft serve, and this furnace-like heat isn't helping any of our cravings.  

But out of all the cream in the land, the Middle Eastern booza may be the coolest of them all, thanks to its stretchy, soft-cheese texture from the 500-year-old recipe of sahlab (ground orchid root) and mastic (a resin). At the newly opened Republic of Booza in Williamsburg, you can try 35 different flavors in either the traditional Candied Cream or in the unconventional "Classic," "Global" and "Experimental" flavors like Salted Oreo, Sichuan White Chocolate, Mint Tahini Chip and Horchata de Chufa.

The 700-square-foot modern shop at 76 N 4th Street was started by four friends who really love the world's "original ice cream." We can't think of a better way to cool down during this heat wave.
