Opening Hildur in the spring of 2025, co-owner Emelie Kihlström's restaurant nods to her ancestry in more ways than one. Hailing from Sweden, Kihlström's Scandinavian-inspired bistro is also named after her grandmother who instilled a love of food from the beginning. Alongside co-owner Elise Rosenberg (the duo own Colonie and Pips), Hildur explores Scandinavian cuisine with a touch of French influence.
Executive chef Brennan Taulbe hits on the classics—think pickled herring and Swedish meatballs on the savory side while sweets include the Scandinavian torte, Princess Cake. Modern interpretations shine with oysters punched up with dill oil and aquavit mignonette while crisp, blackened cabbage bursts with a generous layering of trout roe. The theme carries through to the cocktail menu, as drinks are stirred with lingonberry and aquavit.
