Elijah Pies' new Joo Chiat flagship brings chocolate soufflé and pizza pies

Its third and largest store opens on September 12 inside a restored 1930s shophouse

Here's another stop for your Joo Chiat wanderings: Elijah Pies' brand-new flagship store at 72 Joo Chiat Place. 

The homegrown brand is best-known for its artisanal dessert pies – most notably its marbled and highly Instagrammable wild berry lavender pie – and has physical stores at Tanjong Pagar Plaza and King George's Avenue. The new flagship is its third and largest location, a 60-seater within a restored 1930s Peranakan shophouse.

There are some serious credentials behind the flagship's design. Elijah Pies collaborated with Nice Projects, a London- and Sydney-based design studio behind other gorgeous projects like Odette and New Bahru.

For Elijah Pies, they've refreshed the original shophouse facade in the brand's signature navy blue and laid down 1,480 Italian-carved travertine tiles in a geometric pattern as a subtle nod to Joo Chiat's Peranakan heritage. A table for 10 anchors the space, complete with a Lazy Susan centrepiece for easy sharing. There's also a private dining room with a botanical backdrop designed by This Humid House if you ever want an intimate birthday or anniversary gathering. 

What's new on the menu?

All this sets the scene for the refreshed menu. One new addition is the Elijah's Soufflé Pie, a chocolate soufflé pie with a warm gianduja centre over almond joconde and hazelnut praline, topped with a handmade chocolate flower inspired by Peranakan tilework. This is made to order, so it comes piping hot from the oven. 

Another new sweet treat is the Kaya Toffee Pie ($9), featuring housemade pandan coconut jam and gula melaka toffee – again, in homage to the flagship's location in Joo Chiat.

Elijah Pies is no stranger to savoury pies, but they're taking it a step further with pizza pies on the flagship's menu. Inspired by Chicago deep-dish pizza, these come in four flavours: garlic ebi ($22), truffle croque ($24), Cheeseburger ($23), and Ruffles ($23) in sour cream and onion. The magic is in the crust, made in-house through a three-day process where dough is folded into 27 alternating layers of French butter and flour. 

Pets can join the fun too, with mini 'Pup Pies' by pet bakery Petissier in wild berry lavender and Matchamisu (both $9), made with chicken breast, potato, Chinese yam, and coconut cream.

A series of creative mocktails will be available for dine-in alongside Elijah Pies' regular drinks. The 1930 ($13) is a Nyonya-inspired concoction with pandan-infused coconut water, butterfly pea and cloud foam diffusion, topped with clarified hazelnut milk. 'Berry Bubble' ($12) is Elijah's own twist on the popular strawberry matcha drink, featuring cold-brew green tea topped with strawberry espuma, served with a strawberry leather roll-up made from baked puréed fruit.

'Rolly Lolly' ($13) is a refreshing drink inspired by Elijah's favourite childhood fruit with flavours of mango, grapefruit and orange blossom, while 'White Soirée' ($12) brings a touch of elegance with white tea, sauvignon blanc grapes, and non-alcoholic Prosecco. 

Time Out tip: Bring a big group and order the chocolate soufflé pie and pizza pies (all four if you can) – these are the most distinctive draws even if you've already been to the Tanjong Pagar outlet.
