This Osaka import has long been drawing queues – both in Japan and Singapore – from those eager to dig into its soufflé pancakes. The takeout menu sees the signature jiggly stacks topped with fresh mango ($20.90), drizzled with Lotus biscuit syrup ($20.90), or covered with melted Hershey’s dark chocolate ($20.90). Flipper’s is another Japanese import, best known for serving its stacks with just two forks. Its soufflé pancakes are so soft that they are meant to be enjoyed without a knife. The cloud-like treats are first made with a batter of Hokkaido wheat flour and eggs from Kanagawa prefecture, then served with fancy seasonal fruits which might feature Andes melon ($24.80) and Chitose strawberries ($26.80). Away from the airy Japanese soufflé pancakes, savour some classic stacks from New York City’s Clinton St Baking Company and Restaurant. Many regard its rendition of blueberry pancakes (from $22) as one the best, but the massive circles of flour and eggs can also come in options of banana walnut or chocolate chunks. If you somehow still have space for more, try its chicken and waffles – another popular item on its menu – for another hearty brunch classic.
