Spectre, the latest pop-up to grace Ghostwriter’s incubation space, takes guests on a journey towards wellness through exceptional food, creative cocktails and meaningful conversations. Created in collaboration with Inch Chua, singer and Masterchef Singapore finalist, and Andrew Pang, bar consultant and Beam Suntory’s Regional Brand Ambassador, Spectre’s pop-up offers a glimpse of what’s to come when they unveil their new digs in Tanjong Pagar come July.

Let Inch take you on a tour through Southeast Asia with pitstops in the Philippines for mackerel kinilaw ($20), Indonesia for sambal smoked ducked ($22) and Singapore for a Eurasian feng curry bowl with rice ($16). The menu evolves weekly, driven by Inch’s creative whims as she concocts new and exciting dishes in preparation for the launch of the restaurant. But the one dish we hope she keeps on the menu has to be black pepper speckled souffle ($16) served with a side of white pepper ice cream. The clever savoury dessert packs a spicy punch and is sure to leave a lasting impression.

The culinary experience is complemented by an array of cocktails that also feature herbs and spices from the region. The Mestizo – which means a person of mixed race – blends Japanese Haku Vodka with Spanish fino sherry alongside ingredients like basil and lemongrass, a smashable and refreshing start to your dinner. Thoughtfully crafted cocktails also provide a glimpse into Sprectre’s vision of becoming a mental wellness space for the community. Take, for instance, the Retrospect – served in a mirrored jewellery box, it encourages introspection and looking to the past as your sip on the sweet and bitter elixir that’s meant to evoke memories of the same nature.

As the night draws to a close, indulge in the warm embrace of a vegetable soup made from the leftover trimmings, which ensures nothing goes to waste. It's the perfect comforting and restorative ending to an evening filled with laughter and friendship.
