This father and pastry chef is the man behind Black Star Pastry – and yup, he’s responsible for that layered watermelon cake. Now, after focusing on the business side of Black Star, he’s hoping to get back in the kitchen and is looking to work with other suppliers that share a common philosophy. 

Chris’s future hopes for Sydney: “Something I think about a lot is sustainability. At the moment very little packaging is made in Australia – it’s all shipped from China. If there was a way to make a carbon neutral packaging [which is] all locally sourced... For me it’s about finding these solutions that are really practical.”
