Japanese Ganbatte
The Hazelnut is a smooth and refreshing drink made with Kraken spiced rum, Frangelico, Monin Coco, fresh lime and gula Melaka; while the exotic Pandan Love – Stolichnaya vodka, pandan-infused syrup, lychee juice, Monin peach syrup – finishes with lingering sweet notes. For an elegant drink to go with the chic surrounds, the understated bold flavours of the Marie Antoinette come courtesy of Champagne Drappier Carte D’Or and Cassis de Bourgogne.
There are also draught and bottled beer, alongside a curated collection of champagne and wine, which is thoughtfully served in a variety of sizes – half glass, glass, carafe and bottle.
Vertigo takes care of non-drinkers too, with delicious signature mocktails like the Fruit De La Passion with brewed Earl Grey tea, passion fruit and fresh lemon juice; or the Sour Plum Spritz with fresh sour plum, peach, lemon and soda. The Gunner provides a little spicy kick, with ingredients like ginger beer, ginger ale and Angostura bitters.
Alternatively, fruit juices, soft drinks and specialty tonics are served together with coffee and an enviable range of fine teas by Harney & Sons.
Spiced Roasted Gaucho Steak Skewer
Pairing perfectly with the drinks is an array of Southeast Asian-inspired tapas that, true to the Banyan Tree spirit, go beyond the typical bar bites. Guests can indulge in options like beef tartare with hand-cut Angus steak, turmeric-spiced Atlantic salmon with an Aruga caviar dip, steak skewers served with fluffy naan, char-grilled chicken and beef sliders, as well as a selection of oysters and caviar.
At Vertigo, you can expect the signature luxe experience and exceptional service Banyan Tree is known for.
