Join him at a one-night only seven-course dégustation dinner. Start off with the snails and roquefort lollipop followed by the green pea velouté and chicken vol-au-vent. The course continues with the salmon in almond and Comté crust, Wagyu beef cheek braised in red wine and croquette of Reblochon fermier. End with the pear poached in raspberry and fresh cheese foam.
