What was a challenge on ‘Fear Factor’ is in fact a gastronomic pleasure for us – the durian often sits on the thin line between yum and yuck. And to have an entire parlour serving various durian permutations such as cream puffs, chiffon cakes, Swiss rolls, cheesecakes, mousse and mochis is really pushing the envelope. Don’t worry, pastries here are spot-on homages to the king of fruits. The crisp cream puff, piped in with sumptuous durian custard, is intensely flavoured and supple, like biting into chilled whipped cream.
