It’s no mystery that Charcoal specialises in charcoal-grilled items. Pick from meats like rack of lamb, rib eye, tenderloin, short ribs and black Angus tomahawk (for sharing), all grilled to achieve a distinct smokiness. Seafood options are wild Sarawak garoupa in turmeric and sea salt, Sabah rock lobster with ginger and coriander, and tiger prawns with kaffir lime and lemongrass. Even the vegetables appear to have been smoked, like the baked stuffed eggplant and bitter gourd stuffed with seafood. Charcoal keeps the theme going even in its desserts, with offerings like grilled fruits with caramel, and tapioca with glutinous rice and mango.
