Lai Ching Yuen in Grand Millennium Kuala Lumpur is all about authentic Cantonese cuisine, and Executive Chinese Chef Terence Foong takes great pride in creating dishes that appeal to all the senses. Celebrate this Spring Festival with a choice of three specially prepared menus aptly named Opulence, Longevity and Happiness. Each of the nine-course menus features the freshest produce and top-quality seasonal Chinese New Year ingredients.

Deep-fried pickled cabbage and chicken spring rolls

The meal begins with a selection of specially prepared dim sum, for which the restaurant is famous. These include steamed seafood dumplings with dried oyster and fatt choy (black moss), deep-fried pickled cabbage and chicken spring rolls, steamed fish maw with prawn paste and crab meat sauce, deep-fried onion puff with chicken ham and walnuts, and pan-fried soft buns with fatt choy. After this delicious first course, a complementary yee sang is served and diners can choose from toppings like Norwegian salmon, crispy fish skin, soft-shell crab, abalone, jelly fish and barbecued pork; there’s also a vegetarian version. The sauce is the star ingredient and made in-house with plums and other tangy stone fruits.

After tossing for prosperity and good luck, the ensuing dishes include excellent renditions of traditional dishes like barbecued whole suckling pig, grouper fillets with spring onion and ginger, roasted marinated spare ribs and Chinese wax meat clay pot rice. Chef Terence’s signature Hong Kong style roast ‘Pi Pa’ duck also makes a welcome appearance with its perfectly crisp skin and delicate meat. What makes this signature dish so special is that it’s hung for at least 36 hours to dry, marinated with honey, vinegar and rice wine, and then cooked to order. End this abundant meal with a sweet pan-fried nian gao accompanied with refreshing double-boiled longan, sea coconut and white fungus.
