Back by popular demand at Senja is Chef Yuichi Kamimura from Michelin-starred restaurant KAMIMURA at the skiing slopes of Niseko. Sourcing his ingredients from Hokkaido farms, the protégé of Chef Tetsuya Wakuda is known for his French and Japanese fusion cooking. This time, the one Michelin-starred chef will be at Senja for four days, presenting a degustative four-course menu including dishes such as roasted lamb and tomato with smoked eggplant and ginger cream, seared yellow fin tuna with olive and eggplant salsa, and more. There will be a special wine pairing gala dinner on the 24th with Australian wines presented by wine connoisseur Brian Kent of Frankland Estate in Western Australia.
