The ambitious test kitchen that sits above Sitka Restaurant in Plaza Batai, Sitka Studio is now open every Friday for dinner. It's hard to categorise the tasting menu into one cuisine type as the dishes range between Modern European and Modern Asian styles. April's menu features chicken parfait, yuba skin tart and pickled grape; grilled baby kai lan with kelp glaze and smoked confit yolk; roast market fish with calamansi vinegar butter, trout roe and sea prawn; cavatelli with smoked garlic and goat's milk; and kom-brulee, a crème brûlée dish topped with candied kombu. Reservations recommended.
