The Ding’s

The Ding’s isn’t your standard noodle joint. (There’s also rice and man tao.) Here, recipes are riffed off Chinese cuisines, resulting in such hits as hand-pulled mian xian in a mild sake broth, topped with clams, mushroom, and a kampung egg. Other crowd favourites include noodles with smoked sake-infused char siew roll, hock chew fish balls or grouper slices. These bowls are so comforting, you’d still want to seek them out in warm weather.
