Hunger pangs: Pancake stall

'This no-name stall at the end of Newport Place sells pancakes which you can have filled with a hot dog, a savoury doughnut or a fried egg.' Opposite 4-8 Newport Place, WC2H 7JP.

Flour power: Loon Fung

'This is the only Chinatown supermarket doing fresh butchery and selling live crab. But I go for their flour range, suitable for every type of Chinese pastry.' 42-44 Gerrard St, W1D 5QG.

Green Party: New Lin Moon

'They sell all sorts of Southeast Asian fruit and veg, such as green papaya, pandan leaves and stink beans. The women who work there give me advice on how to use them: I just pick something up and ask.' 9 Gerrard St, W1D 5PL.

Hidden hardware: See Woo

'There's a secret room downstairs where they sell kitchen equipment. It really excites me to explore down there. If I need a meat needle for pricking pork skin to make crispy pork, I know I can get it from them.' 18-20 Lisle St, WC2H 7BA.
