If you consider yourself something of a curry connoisseur and aren’t shy of splashing the cash, chances are a trip to Trèsind is probably on your bucket list. The seriously upmarket eatery, which debuted in Dubai in 2014, announced it was bringing its three-Michelin-starred Indian fare to appropriately posh Mayfair earlier this year.
Now, joining its 57-cover main space and two private dining rooms is a swish basement cocktail bar called Tryst. The 30-cover subterranean space serves up sips inspired by Indian flavours and ingredients. Each drink on its debut menu, cooked up by former SOMA head bartender Marina Juszczyk, is designed around an ingredient from an Indian region.
Take the Konkan, a sour and savoury highball ‘finished with a dehydrated toasted coconut crisp made from twice-carbonated batch and a four-hour aeration process’. Try saying that three times fast.
Rajasthan's preserved fruits and dry spices are the inspo behind the Bikaner, a sour serve made with kumquat, Johnnie Walker Blue Label, aamchoor, cognac, Amaro Montenegro, peppercorn and buttermilk.
Tryst’s owners have designed the minimalist space (think natural stone and brushed metal interiors) around a central bar, which they say functions ‘less as a service counter than a stage’ for flamboyant cocktail-making techniques, like milk washing, sous-vide infusion and carbonation.
It’s already open to the public, and you can find Tryst at 13-14 Hanover Street, Mayfair, W1S 1YHH.
