Back in late 2022, an unconventional love story was born. Whyte Rushen – the wildly talented London-born chef with a Michelin background (Brat, Skully St James and Kerridge’s) – visited Jollibee in Leicester Square. And there at the flagship restaurant of this chicken chain from the Philippines, he tried the Jollibee Spicy Chicken Sandwich. ‘The chicken is ultra crispy, juicy, so perfectly spicy (like actually spicy spicy)... the bread made in house is pillowy soft with a slight sweetness,’ he raved on Instagram. ‘I like the cult status of it all, the buzz, the vibe, the brightness, how unapologetically “fast food” it is, yet of such a high, high standard.’ Rushen isn’t alone in his love of the Jollibee Spicy Chicken Sandwich: it’s a favourite for a reason, with its breast fillet made with a spicy marinade, coated in a fiery breading and topped with hot sriracha mayo and fresh lettuce, served in a brioche bun. Truly, it is a beautiful thing to behold.
This wasn't the first time that Rushen had tried Jollibee: ever since the brand opened its first London restaurant in 2018, he'd heard about the epic queues and was super keen to try it for himself. When he finally did visit, it was love. He didn't just want to eat at Jollibee – he wanted to collaborate. Rushen has become famous for his left-field pop-ups, from oysters with pickled onion Monster Munch at Dalston Roof Park to spiced duck pizza at The Hawk’s Nest. His latest venture is our must-have collab dish for March: tater tots to pair with the Jollibee Spicy Chicken Sandwich. It's the first time Jollibee has ever collaborated with a chef; and as Whyte said on Instagram, it's a 'monumental' moment in his career.
