Single-subject restaurants are nothing new to New York but while many concepts can warrant an eye roll, a guacamole-themed restaurant is one one-dish eatery we can get behind.

Opening not-so-coincidentally on National Guacamole Day this Friday, September 16, GUAC Tacos + Tequila will serve 11 varieties of the namesake dip, from a faithful rendition with tomato, cilantro macho and chile serrano, to more modern incarnations like a Spanish olive variety, a chopped bacon version and one with California sweet mango. (Don't worry, there's a three-guac sampler if you can't choose.)

Beyond guac, diners can expect a selection of tacos (steak, shrimp, grilled cactus), traditional Mexican plates (chicken mole, carne a la tampiqueña) and 10 different types of tequila. 179 Ave B between 11th and 12th Sts (212-254-4822, guacnyc.com)
