Wylie Dufresne to make madcap doughnuts inside the William Vale Hotel

Joining Andrew Carmellini's Italian newcomer Leuca inside Williamsburg's new William Vale Hotel comes a doughnut shop with serious pedigree: It's helmed by none other than James Beard Award-winning molecular-food icon Wylie Dufresne. 

Dufresne— who shuttered his iconic restaurant wd~50 in 2014 and its more casual follow-up, Alder, a year later—announced the new project on Twitter today, which will be called Du's Donuts and Coffee.

Known for his innovative and wacky cuisine (think pickled beef tongue with fried mayonnaise), there's no telling what kind of gonzo flavors await. A latke doughnut with smoked-salmon sprinkles? Lemon-drop cake doughnuts with boysenberry glaze? Stay tuned for more details.
