When the Okiboru team came to New York in 2023, its mission was to introduce us to Japan's popular dipping noodle, tsukemen. Its follow-up sister spot, Okiboru House of Udon, is all about the Himokawa udon noodle. Originating from Kiryu, a city in the Gunma prefecture, these flat, wide noodles are served in Okiburu’s classic broth or with a yuzu dipping sauce on the side.
