Celebrate Peru's signature spirit at Pisco Nights this December

Ring in the party season with Pisco Nights which will be happening throughout the month of December as part of the Singapore Cocktail Festival (SGCF) this year. The festivities will run from December 1 to 31 and is brought to you by PROMPERÚ, the export and tourism agency for Peru. Last year, the campaign and its custom cocktails by respected bartenders was brought into Hong Kong and received a widespread welcome from all party animals in the island city. Now it's ready to expand its renown to other Southeast Asia's cocktail capitals – Singapore included.

The star of the show is, of course, Pisco, the signature spirt of Peru. Pisco is a type of brandy, distilled from fermented grape juice using only eight grape varietals and produced in three distinct styles: puro, acholado and mosto verde. Its light mouthfeel makes it a nice spirit for sipping and also mixing in cocktails. Most may already be familiar with the popular Pisco Sour – but come December, be prepared to delve deeper into the world of Pisco.

Around the city, some of the best bars will be coming up with delicious Pisco-based concoctions which the public can try. But head down for a taste as these cocktails will be available for a limited time only. Participating bars for Pisco Nights include current No. 14 bar in the recent World’s 50 Best Bars 2020, Manhattan. Head bartender Sophia Kang presents G.O.A.T which is inspired by one of the greatest rock bands of all times, The Ramones. Manhattan puts a New York spin to the whiskey sour with Moscatel Pisco, amaretto, pandan, lime juice, egg white and a surprisingly savoury touch via Shio–Koji syrup (a fermented mixture of rice, salt and water).

If you like your Pisco mixes to be on the sweet side, these are the bars to watch. Get fruity with the bespoke libations from Gibson and Bar Stories – called Golden Bellini and Passion in Peru respectively – which play around with bright and tropical ingredients like passionfruit juice and lemon juice. Potato Head's Pisco Martini is a recreation of the classic pisco punch from the 1870s and uses Pisco, charred pineapple, lemon and sugar. 

XOCO8 from Anti:dote and Mariposa Morada from Skai

Bars like Anti:dote and Skai Bar pay homage to South American culture with its creations – XOCO8 from Anti:dote draws inspiration by Xocolatl, a traditional Mayan spiced chocolate beverage. The bright purple Mariposa Morada from Skai Bar is a nod to the Peruvian traditional drink called Chicha Morada (purple beverage) which is a brew of purple corn cooked with pineapple peel and spices.

Nutmeg and Clove, get cheeky with its Singaporean interpretation, Coffee, Tea or Butter. Honouring coffee shop culture, the drink marries two popular local beverages: kopi gu you (coffee with butter) and yuan yang (milk coffee and tea). What you get is a delicious blend of salted spiced butter washed Quebrenta Pisco, coffee liqueur, and clarified milk tea.

 

But that's not all, other bars joining in the fun are Jekyll & Hyde, Ah Sam Cold Drink Store, Origin Bar, MO Bar, Barbary Coast and more. 

Besides imbibing in Pisco drinks all month (and all night), you can also learn a thing or two during the SGCF. Because we can't travel out of Singapore at the moment, the SGCF On Tour programming of the festival is made for those who crave a little getaway. Indulge Experimental Bistro – also ranked No. 43 on The World’s 50 Best Bars 2020 list will host a virtual masterclass on December 17, 6 to 7pm where you can learn how to make the Pisco-inspired cocktail Kué Tsí, led by its head bartender Grace Tsai.

 

The masterclass will also provide all the tools and ingredients you need including a three-piece SGCF Cocktail Shaker Set; spirit, mixers, and ingredients required to make the cocktail; and if all else fails: a limited edition SGCF bottled ‘Kué Tsí’.
