5 new restaurants awarded a Michelin star in Singapore

You win some, you lose some. This year saw the closure of some of Singapore's best restaurants including André and Joël Robuchon, which resulted in the loss of eight stars for Singapore in this year's Michelin Guide. The mood was noticeably somber at this year's ceremony, with no new entries to the two-star category and no three-star restaurant for Singapore in 2018.

Five new restaurants were awarded one Michelin star, including Nouri, Time Out Singapore's best new restaurant of 2017. Others include Aussie barbecue restaurant, Burnt Ends, which ranks 12th on the Asia's 50 Best list; Jiang-Nan Chun, a Cantonese restaurant at the Four Seasons Hotel; Ma Cuisine, a new gastro-bar with an incredible wine list and Sushi Kimura, an intimate sushi-ya at the Palais Renaissance. Osia did not retain its Michelin star and with the loss of both Joël Robuchon restaurants, Resorts World Sentosa has lost all its stars despite its strong showing in Michelin's first year in Singapore.

The guide recognised Singapore's culinary pioneers, Guan Hoe Soon Restaurant, Dragon Phoenix, Roland Restaurant and Loy Kee Chicken Rice as a part of its gala dinner. Their dishes served as the inspiration for the six-course dinner ($595) presented at the ceremony. Prepared by the likes of chefs Emmanuel Stroobant (Saint Pierre, Singapore), Sun Kim (Meta, Singapore), Lam Ming Kin (Longtail, Taipei), Arnaud Dunand-Sauthier (Le Normandie, Bangkok), Alvin Leung (Bo Innovation, Hong Kong) and Rishi Naleendra (Cheek by Jowl, Singapore), the meal consisted of dishes like chilli crab bibimpap, black garlic chicken riz (no, that's not a typo) and ikan buah keluak. And while it's a nice gesture to commend our pioneering local restaurants, it's no Michelin star.

We hope to see more local restaurants acknowledged in future awards, but till then, here are the starred restaurants in this year's Michelin guide.
