As November rolls in, Singapore's dining scene is kicking into high gear, with a slew of exciting restaurant openings prepared to take reservations for the festive season. It's also the perfect time to catch up with friends one last time before everyone scurries off on their year-end holidays. This month's new restaurants span the globe, from a homegrown private dining success turned full-fledged Southeast Asian grill, to the first international outpost of an acclaimed Fujian restaurant from Suzhou, China. Italian cuisine gets two exciting interpretations this month – one modern and elegant at The St. Regis Singapore, and the other celebrity chef-backed and sustainability-focused at Sentosa. Meanwhile, Turkish food lovers can look forward to authentic dishes and vibrant street eats beyond the usual döner kebab, at a buzzy new restaurant along Beach Road. 1. South & East
It's always worth celebrating whenever a home-based dining concept makes it big. This month, husband-and-wife duo Shane and Evelyna unveil their full-fledged restaurant South & East, at the National University of Singapore's Shaw Foundation Alumni House. The couple – both hailing from distinguished F&B backgrounds – started their private dining outfit SouthEast during the pandemic, hosting 10-course dinners out of an apartment in Bayshore. Despite the unlikely location of their new restaurant, the menu alone is reason enough to head down. The duo serves up charcoal-grilled and smoked meats with Southeast Asian flavours. And the highlight is their signature five-spice smoked beef short ribs, which marry Shane's skills in smoking meat with Evelyna's Indonesian heritage. This dish takes more than 10 gruelling hours to prepare, and is infused with a house-made spice rub, glazed with kecap manis barbecue sauce and finished off with pickles. Other must-tries include the grilled fish fillet with spiced coconut sauce, BBQ claypot laksa rice with seafood and BBQ wagyu beef skewers with marmite glaze and spring onions.

2. Ban Lan 班嵐
Suzhou's Michelin-Selected Ban Lan is debuting its first overseas outlet in Scotts Square this month, starting with a soft opening on November 7. The heritage restaurant specialises in Fujian or Hokkien cuisine, known for its focus on delicate and lighter flavour profiles, as well as seafood dishes and nourishing soups. Veteran chef Sun Xiao Yang, who is a Fujian native, leads the kitchen at Ban Lan Singapore. He is a disciple of Chef Wu Rong, who previously picked up the 2024 Chef of the Year award by the Black Pearl Restaurant Guide. Delight your taste buds with classics like Southern Fujian spring rolls (run bing), a 400-year-old dish recognised as a UNESCO Intangible Cultural Heritage; 24-hour slow-simmered Buddha Jumps Over the Wall with premium seafood; steamed glutinous rice cake with crab; and for a touch of luxury, the baked Boston lobster with truffle and Fujian glutinous rice. The feast continues with Ban Lan's crispy sesame chicken, smoked with fragrant Anxi Tie Guan Yin tea. This particular dish will be offered at half price from November 7 to 16, as part of the restaurant's opening promotion.

3. Sophia
The St. Regis Singapore swaps out its former steakhouse The Astor Grill, for an elegant, glasshouse-inspired Italian restaurant, Sophia. Chef de Cuisine Angela Sergio from Puglia brings a wealth of knowledge from all across Italy. The menu is hence distinctly modern Italian and influenced by 11 regions across the country. Start light with the homemade focaccia, dotted with various toppings like cherry tomatoes, beef bresaola, goat cheese, honey, stracciatella, smoked tuna and more. Seafood lovers shouldn't miss out on the smoky grilled octopus, presented over fava beans, onions, mint, lemon zest and semi-dried tomatoes. The red Mazara prawn carpaccio is another good shout, with unique additions of raspberry, lemon gel and celery to give it a zesty lift. Fill up on pastas like the Hickory-smoked porcini tagliatelle with veal jus, exclusively available at Sophia, or go classic with the hearty pappardelle ragu. And make sure to save space for desserts – the cannoncini alla crema and salame di cioccolato are prepared and served tableside for an extra dose of theatrics.

4. Pera Turkish Grill & Mezze
Forget that grab-and-go döner kebab, Turkish food is making a proper comeback in Singapore, with the opening of Pera Turkish Grill & Mezze at South Beach. The buzzy restaurant is named after Pera, a district in Instanbul, and you'll even be dining under lights inspired by the city's iconic Yeni Cami Mosque. But more than the ambience that transports you to the bustling streets of Istanbul, this new grill brings the spirit of Turkiyë through an authentic menu chock-full of lesser-known dishes. The best part? The team is fully Turkish, and they source most of their ingredients straight from Turkiyë. Highlights include the girit ezmesi, a spin on the traditional Turkish feta and pistachio mezze, jazzed up with melon slices, herbs and roasted Antep pistachios. Then there's the street food special, izgara hellimli sarma, a grilled snack of wine leaf-wrapped halloumi cheese, paired with a cherry tomato salsa dip and pine nuts. Sucuklu pide is a hallmark of Turkish cuisine, where flatbread is topped with cheese, spiced tomato butter and spicy cured beef sausage. And to share, order the ege izgara levrek – whole grilled seabass with arugula and lemons.

5. Laurus Table
You might recognise Chef Fabrizio Ferrari (also known as Fabri) from Netflix's Culinary Class Wars, where his infectious energy and impressive Korean won over many viewers. The Italian Chef and YouTube personality actually ran the Michelin-starred restaurant Al Porticciolo 84 in Italy before moving to Seoul in 2019. Now, he presents Laurus Table in Singapore, a sustainable seafood restaurant where produce is sourced from local fish farms and greens from the restaurant's own herb garden. The new 106-seater is housed in the new luxury resort, The Laurus, in Sentosa. The cuisine is distinctly Italian, with many dishes taking inspiration from the bright, refreshing flavours of the Amalfi Coast. Dig into a whole salt-crusted branzino salt-crusted with wild fennel and lemon, Chef Ferrari’s signature scialatielli spaghetti pasta sautéed with seafood and wrapped in foil, or the mafaldine pasta, doused in a creamy, tangy sauce of Amalfi lemon, limoncello liqueur, anchovies and fennel. The restaurant also offers activities like chef-led tastings, cultural storytelling sessions, as well as an interactive cooking class with a tour of the herb garden and a bespoke three-course meal in the restaurant’s private dining kitchen.
